How To Make The Perfect Creamy Pie

Ingredients You'll Need For The Crust
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 2 sticks (1 cup) of cold unsalted butter, cut into small pieces
- 4-8 tablespoons ice water
Ingredients You'll Need For The Filling
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- Pinch of salt
- 2 large eggs
- 2 cups whole milk
- 3 tablespoons unsalted butter
- 1 teaspoon pure vanilla extract
- 1/2 cup heavy cream
Directions For The Crust
Step One: In a medium bowl, mix together the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Step Two: Add in the ice water one tablespoon at a time while stirring with a fork until the dough comes together.
Step Three: Gather dough into two balls and flatten each one into a disk before wrapping it in plastic wrap. Refrigerate for 45 minutes or until chilled through.
Step Four: Preheat the oven to 375 degrees F (190 degrees C).
Step Five: Roll out one disk of dough on a lightly floured surface until it's about 12 inches in diameter and transfer it to a 9-inch pie plate or tart pan. Trim edges and crimp as desired.
Step Six: Prick the bottom of the crust several times with a fork then chill for 15 minutes before baking for 20 minutes or until golden brown.
Step Seven: Set aside to cool completely before adding the filling.

Directions For The Filling
Step One: In a medium saucepan over medium heat, whisk together sugar, cornstarch, salt, and eggs until smooth.
Step Two: Slowly add in milk while whisking constantly until well combined.
Step Three: Cook over medium heat while stirring constantly with a wooden spoon until thickened.
Step Four: Now remove from heat and stir in butter and vanilla extract until incorporated.
Step Five: Pour filling into the cooled crust
Step Six: Now cover with a plastic wrap directly touching the top of the filling so it doesn't form a skin while chilling in the refrigerator for 3 hours or overnight.
Step Seven: Once chilled, spread heavy cream over the top of the pie.
Step Eight: Decorate as desired with additional heavy whipped cream, white fondant or if you wish to add in a little chocolaty flavor, pour over some ganache if desired before serving immediately! Enjoy!
