The Ingredients 

The first step in making the Victoria Sponge is to gather your ingredients. You will need:

  • 4 large eggs
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/2 cup of butter (unsalted or salted) 
  • 2 teaspoons of baking powder 
  • 2 cups of all-purpose flour. 

    Making the Cake

    Step 1: Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius). 

    Step 2: In a medium bowl, mix together the sugar, butter, eggs, and vanilla extract until it’s light and fluffy. 

    Step 3: Gradually add the baking powder and flour until everything is blended together well. 

    Step 4: Grease two round 9-inch baking pans with butter or cooking spray before pouring the mixture into it evenly. 

    Step 5: Bake in the oven for 25 minutes. Allow to cool before adding on your favorite jam and cream filling! 

    Finishing Touches 

    To complete your Victoria Sponge cake masterpiece, spread a layer of jam or buttercream filling onto one side of each cooled cake layer and top with whipped cream.
