It seemed ideal to share the recipe for this super moist and decadent pumpkin cupcake topped with cheesecake frosting just days apart from this popular festivity. You can also opt for a store bought whipped topping to save time. Our love for pumpkin spice cake inspired this scrumptious creative cupcake idea. It can be made from scratch and quickly be whipped up without rushing out for ingredients; You are sure to find them in your kitchen already! Now that you know what we have planned, let's check out the ingredients! 

 Ingredients 

Pumpkin-Cupcake 

1. All-purpose flour 125gm 
2. Baking powder 1 tsp
3.  Baking soda 1/2 tsp
4.  ground cinnamon 1/2 tsp
5.  ginger 1/4 tsp 
6.  nutmeg 1/4 tsp
7.  cloves 1/8
8.  salt 1/4
9. Pumpkin puree 250gm
10. vegetable oil 120ml
11. brown sugar 100gm
12. granulated sugar 50gm
13. large eggs 2 
14. vanilla extract 1 tsp 

Cream Cheese Frosting

1. softened cream cheese 8 ounces
2. unsalted butter softened 115gm
3. confectioners sugar 240gm
4. vanilla extract 1 tsp

Instructions 

1. Preheat oven to 177 degrees Celsius 
2. Whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt 
3. Whisk together pumpkin puree, oil, brown sugar, eggs, granulated sugar, and vanilla in another bowl. combine well 
4. Add the wet ingredients to the dry ingredients and mix until well combined 
5. divide the batter and, fill the cupcake liners, smooth out the tops
6. Bake for 17-22 minutes 

Cream cheese frosting 

1. using a handheld mixer, beat butter and cream cheese together until smooth 
2. add powdered sugar and vanilla extract 
3. mix until fully combined 
4. Your frosting is ready to decorate!
